Walnut Chickpea Burgers

Ingredients

The burgers

  • 1 small onion
  • 1 14-ounce can chickpeas
  • 1 cup chopped walnuts
  • 1 cup panko breadcrumbs
  • 1 tablespoon ground flaxseed
  • 2 cloves garlic
  • 2 tablespoons vegan Worchestershire sauce
  • 1 tablespoon red wine vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon paprika
  • ΒΌ teaspoon black pepper
  • as needed none olive oil for grilling

The sauce

  • 4 tablespoons horseradish mustard
  • 1 tablespoon maple syrup

For serving

  • 4-6 none burger buns
  • 4-6 none lettuce leaves
  • 1 large tomato
  • as needed none onion slices

Instructions

  1. Chop the onion in a food processor.
  2. Add chickpeas, walnuts, panko, flaxseed, garlic, Worchestershire sauce, vinegar, soy sauce, paprika, and black pepper to the processor and pulse until well blended.
  3. Test the mixture for consistency and shape into 4-6 patties.
  4. Heat olive oil in a skillet over medium heat and cook the patties for about 4 minutes on each side until browned.
  5. Mix horseradish mustard and maple syrup in a small bowl.
  6. Assemble the burgers with buns, patties, mustard, lettuce, tomato, and onions.
