Instructions
- Blend chickpeas, eggs, carrots, salt, and pepper until smooth.
- Transfer the mixture to a bowl and add parsley, green onions, lemon zest, and bread crumbs. Mix well and refrigerate for 5–10 minutes.
- Wet your hands and shape the mixture into 4 patties.
- Heat olive oil in a skillet over medium-high heat and cook the patties for 3–4 minutes on each side.
- Serve the chickpea burgers in buns with mayo, lettuce, red onion, tomato, and pickles.
