Ingredients

The burger mixture

  • 265 g canned chickpeas, drained or fresh
  • 2 units eggs
  • 1 unit cooked carrot, cubed
  • ½ tsp sea salt
  • 1 handful parsley, chopped
  • 2 units green onions, finely chopped
  • 1 ¼ tsp lemon zest
  • 1 cup panko bread crumbs
  • 2 tsp olive oil

To serve

  • 4 units hamburger buns
  • 1 unit mayonnaise
  • 1 unit lettuce leaves
  • unit finely chopped red onion
  • 1 unit sliced tomatoes
  • to taste units pickles

Instructions

  1. Blend chickpeas, eggs, carrots, salt, and pepper until smooth.
  2. Transfer the mixture to a bowl and add parsley, green onions, lemon zest, and bread crumbs. Mix well and refrigerate for 5–10 minutes.
  3. Wet your hands and shape the mixture into 4 patties.
  4. Heat olive oil in a skillet over medium-high heat and cook the patties for 3–4 minutes on each side.
  5. Serve the chickpea burgers in buns with mayo, lettuce, red onion, tomato, and pickles.
