Gluten Free Vegan Veggie Burger

Ingredients

  • 1 cup cooked, drained chickpeas (or navy beans)
  • 1 cup chopped mixed vegetables (carrot, cauliflower, and broccoli)
  • ¼ cup red onion, diced
  • ½ cup sunflower seeds
  • 1 Tablespoon pine nuts or pumpkin seeds
  • ½ teaspoon dried herbs or 2 Tablespoons fresh dill
  • ¼ cup fresh basil leaves
  • 2 teaspoons ground flaxseed
  • 1 Tablespoon tamari sauce or coconut aminos
  • 1 teaspoon minced garlic
  • ¼ teaspoon kosher salt
  • ¼ cup gluten free flour (cassava, arrowroot, or coconut flour)

Instructions

  1. Preheat the oven to 375°F.
  2. Blend all ingredients except the flour in a food processor until almost smooth.
  3. Add the flour and pulse gently to mix, adjusting flour as needed for consistency.
  4. Form the mixture into a ball, wrap in plastic, and chill in the fridge for 20 minutes.
  5. Oil a baking sheet or line with parchment paper.
  6. Shape the mixture into 5-7 burger patties and place them on the baking sheet.
  7. Bake for 15 minutes, flip gently, and bake for another 10-12 minutes until golden brown.
  8. Serve or cool completely before freezing.
