Ultimate Veggie Burger

Instructions
- If using sprouted chickpeas, steam them until tender, about 10 minutes. Otherwise, proceed with canned beans.
- Pulse the onions in a food processor, then add chickpeas, eggs, and salt, pureeing until thick and slightly chunky.
- Transfer the mixture to a bowl and stir in cilantro, lemon zest, and sprouts.
- Add breadcrumbs and let the mixture sit for a few minutes to absorb moisture.
- Form the mixture into twelve 1 ½-inch thick patties or six larger patties.
- Heat oil in a skillet over medium-low heat, add patties, cover, and cook for 7 to 10 minutes until browned.
- Flip the patties and cook the other side for 7 minutes or until golden.
- Remove from skillet, cool on a wire rack, cut in half, and add your favorite fillings.
