Ingredients

  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms, roughly chopped
  • 2 cloves garlic, minced
  • 1 medium shallot, minced
  • 4 pieces roasted red bell peppers, diced
  • 1 teaspoon fine sea salt
  • 1 can black beans, rinsed and drained
  • ¾ cup old-fashioned rolled oats
  • ½ cup raw walnut halves
  • ½ teaspoon smoked paprika
  • teaspoons ground cumin
  • 1 tablespoon vegan Worcestershire sauce
  • to taste freshly ground black pepper

Instructions

  1. Heat olive oil in a skillet and sauté mushrooms, garlic, shallot, red peppers, and salt until softened.
  2. In a food processor, combine black beans, oats, walnuts, paprika, cumin, Worcestershire sauce, and remaining salt.
  3. Add the sautéed vegetables to the food processor and pulse until combined but slightly chunky.
  4. Shape the mixture into 6 to 7 patties using a 1/3 cup measure.
  5. Cook the patties in a greased skillet over medium-high heat for 2-3 minutes on each side until crispy.
  6. Serve warm with your favorite toppings.
