Vegan Black Bean Burgers

Ingredients

  • 1 Tablespoon light olive oil or avocado oil
  • ¼ cup chopped green onion
  • cup finely chopped jalapeño
  • 2 cloves garlic
  • cup fresh cilantro
  • 15 ounces canned black beans
  • cup gluten-free quick oats or gluten-free panko
  • 3 Tablespoons flax meal
  • 2 Tablespoons grated Parmesan cheese or nutritional yeast
  • 2 Tablespoons tomato paste or other thick chili sauce
  • 1 Tablespoon tamari or soy sauce
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon kosher salt

Instructions

  1. Heat oil in a skillet and sauté green onions, jalapeño, and garlic until browned.
  2. Transfer the sautéed veggies to a food processor with cilantro and pulse until roughly chopped.
  3. Add black beans to the processor and pulse until broken into small chunks.
  4. Transfer the mixture to a bowl and stir in oats, flax meal, Parmesan, tomato paste, tamari, and seasonings until combined.
  5. Form the mixture into 4 patties and chill in the fridge for 20-30 minutes.
  6. Preheat the grill to medium-high heat and cook the patties for 7-8 minutes on each side.
  7. Serve immediately on gluten-free buns with desired toppings.
