Vegan Black Bean Burgers

Ingredients

  • 2 cans black beans
  • 2 units carrots
  • ½ cup dry rolled oats
  • ¼ cup pepitas (pumpkin seeds)
  • 1 tbsp olive oil
  • ½ tsp cinnamon
  • ½ tsp cumin
  • ½ tsp coriander
  • 1 tbsp chia egg (1 tbsp ground chia + 3 tbsp warm water)
  • 1 clove garlic
  • ½ tsp chili powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper
  • 1 tsp sea salt
  • ¼ tsp black pepper

Instructions

  1. Preheat the oven to 325°F.
  2. Process the grated carrots in a food processor until finely grated.
  3. Add the oats and pepitas to the food processor and grind until coarsely chopped.
  4. Add ¾ of the black beans, all spices, and olive oil to the processor and mix until lightly combined.
  5. Transfer the mixture to a mixing bowl and fold in the remaining black beans.
  6. Form the mixture into 6 medium-sized patties.
  7. Place the patties on a lined baking pan and bake for 40 minutes, flipping carefully after 20 minutes.
