Easy Vegan Black Bean Burgers

Ingredients

  • 2 tbsp ground flaxseed
  • 3 tbsp water
  • 2 14.5 oz cans black beans
  • 1 cup Panko breadcrumbs
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp kosher salt
  • ½ tsp ground black pepper
  • 2 tbsp sriracha
  • as needed for cooking oil/cooking spray

Instructions

  1. Make a flax egg by mixing ground flaxseed with water and set aside to thicken.
  2. In a large bowl, mash the black beans until mostly broken up, leaving some whole.
  3. Add the breadcrumbs, spices, sriracha, and flax mixture to the mashed beans and stir until well combined.
  4. Form the mixture into 6 tightly packed patties and refrigerate if not cooking immediately.
  5. Heat a skillet over medium heat and add oil. Cook the patties for about 6 minutes on each side until golden brown, or bake at 350°F for 10-12 minutes per side.
  6. Serve the burgers on buns with your favorite toppings.
