Ingredients

  • 2 cans (14-ounce) black beans
  • 1 Tablespoon extra virgin olive oil
  • ¾ cup finely chopped bell pepper
  • 1 cup finely chopped yellow onion
  • 3 cloves garlic
  • teaspoons ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ½ cup bread crumbs or oat flour
  • ½ cup feta cheese
  • 2 large eggs
  • 1 Tablespoon Worcestershire sauce
  • 2 Tablespoons ketchup, mayo, or BBQ sauce

Instructions

  1. Preheat the oven to 325°F (163°C) and spread the black beans on a lined baking sheet, baking for 15 minutes.
  2. Sauté the olive oil, bell pepper, onion, and garlic over medium heat until soft, about 5-6 minutes, then blot excess moisture.
  3. In a large bowl or food processor, combine the sautéed vegetables with cumin, chili powder, garlic powder, smoked paprika, bread crumbs, feta, eggs, Worcestershire sauce, ketchup, salt, and pepper.
  4. Add the baked black beans and mash gently, leaving some larger chunks.
  5. Form the mixture into patties, about ½ cup each and ¾-inch thick.
  6. To bake, place patties on a parchment-lined baking sheet and bake at 375°F (191°C) for 10 minutes on each side, totaling 20 minutes.
  7. To grill, place patties on greased aluminum foil and grill for 8 minutes on each side.
  8. Serve with your favorite toppings and store leftovers in the refrigerator for up to 5 days.
