Black Bean Burgers

Ingredients

The burgers

  • 2 tablespoons olive oil
  • 7 cloves garlic
  • 15 oz. canned black beans, drained and rinsed
  • ½ cup sunflower seeds
  • ¼ cup uncooked quinoa
  • ½ cup water
  • ½ cup old fashioned rolled oats
  • 1 tablespoon ground cumin
  • a pinch ground cinnamon
  • ½ medium red onion, diced
  • 1 red bell pepper, finely diced
  • to taste salt and pepper

Burger Sauce

  • ½ cup nonfat Greek or dairy-free yogurt
  • 1 tablespoon chili powder
  • 1 tablespoon lime juice
  • teaspoon salt

Toppings

  • 6 pieces hamburger buns
  • 1 large avocado, thinly sliced
  • 2 large tomatoes, thinly sliced

Instructions

  1. Preheat the oven to 350ºF and prepare a baking sheet.
  2. Cook quinoa by boiling it with water, then simmering until water is absorbed.
  3. Sauté smashed garlic in olive oil until golden brown.
  4. Combine garlic, black beans, sunflower seeds, oats, cinnamon, and cumin in a food processor and pulse until a paste forms.
  5. Mix the black bean paste with onion, quinoa, and red pepper until well combined.
  6. Form the mixture into patties using a measuring cup.
  7. Bake the patties for 20 minutes, flipping halfway through.
  8. While baking, prepare the burger sauce by mixing yogurt, chili powder, lime juice, and salt.
  9. Serve the burgers on buns with sauce, avocado, and tomato.
