Instructions
- Preheat the oven to 350ºF and prepare a baking sheet.
- Cook quinoa by boiling it with water, then simmering until water is absorbed.
- Sauté smashed garlic in olive oil until golden brown.
- Combine garlic, black beans, sunflower seeds, oats, cinnamon, and cumin in a food processor and pulse until a paste forms.
- Mix the black bean paste with onion, quinoa, and red pepper until well combined.
- Form the mixture into patties using a measuring cup.
- Bake the patties for 20 minutes, flipping halfway through.
- While baking, prepare the burger sauce by mixing yogurt, chili powder, lime juice, and salt.
- Serve the burgers on buns with sauce, avocado, and tomato.
