Ingredients

The burger mixture

  • 1 ½ cups cooked black beans
  • 1 each chipotle chili in adobo sauce
  • 1 each onion, chopped fine
  • 1 tablespoon garlic, minced
  • 2 tablespoons tomato paste
  • ½ teaspoon chili powder
  • ¼ teaspoon crushed red pepper
  • ¾ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 cup cooked quinoa
  • ½ cup breadcrumbs
  • ¼ cup cilantro, minced
  • ½ cup Monterey Jack cheese, shredded
  • 2 each eggs, beaten

For cooking

  • 2 tablespoons avocado oil

Instructions

  1. Measure your ingredients.
  2. Pulse ½ cup of black beans with the chipotle chili in a food processor and combine with the remaining black beans in a bowl.
  3. Heat a skillet with oil and sauté the chopped onion for 7 minutes, then add garlic, tomato paste, chili powder, crushed red pepper, salt, and pepper, cooking for an additional minute.
  4. Combine the sautéed mixture with the black bean mixture, then stir in quinoa, breadcrumbs, and cilantro.
  5. Let the mixture cool for 3 to 4 minutes before adding eggs and cheese.
  6. Form the mixture into patties and freeze for 10 minutes.
  7. Heat oil in a skillet and cook the patties for 3 to 6 minutes on each side.
  8. Serve on buns with desired toppings.
