Black Bean Quinoa Burgers

Instructions
- Measure your ingredients.
- Pulse ½ cup of black beans with the chipotle chili in a food processor and combine with the remaining black beans in a bowl.
- Heat a skillet with oil and sauté the chopped onion for 7 minutes, then add garlic, tomato paste, chili powder, crushed red pepper, salt, and pepper, cooking for an additional minute.
- Combine the sautéed mixture with the black bean mixture, then stir in quinoa, breadcrumbs, and cilantro.
- Let the mixture cool for 3 to 4 minutes before adding eggs and cheese.
- Form the mixture into patties and freeze for 10 minutes.
- Heat oil in a skillet and cook the patties for 3 to 6 minutes on each side.
- Serve on buns with desired toppings.
