Chipotle Quinoa Burgers

Ingredients

  • ½ cup uncooked quinoa
  • 1 14-ounce can black beans, rinsed and drained
  • 1–2 individual chipotle peppers
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • 1 large egg, beaten
  • 1 teaspoon salt
  • ¼ cup panko breadcrumbs

Instructions

  1. Cook the quinoa according to package directions and allow it to cool.
  2. In a food processor, combine black beans, quinoa, chipotles, and spices, pulsing until the mixture is sticky but not completely pureed.
  3. Transfer the mixture to a bowl and mix in the beaten egg and panko breadcrumbs, then form into 4 thick burger patties.
  4. Heat olive oil in a nonstick pan over medium-high heat and fry the burgers for a few minutes on each side until golden brown and crispy.
  5. Serve the burgers on buns with your choice of toppings like spicy mayo, avocado, lettuce, tomato, and pickled onions.
