Chipotle Quinoa Burgers

Instructions
- Cook the quinoa according to package directions and allow it to cool.
- In a food processor, combine black beans, quinoa, chipotles, and spices, pulsing until the mixture is sticky but not completely pureed.
- Transfer the mixture to a bowl and mix in the beaten egg and panko breadcrumbs, then form into 4 thick burger patties.
- Heat olive oil in a nonstick pan over medium-high heat and fry the burgers for a few minutes on each side until golden brown and crispy.
- Serve the burgers on buns with your choice of toppings like spicy mayo, avocado, lettuce, tomato, and pickled onions.
