Instructions
- Cook the sweet potato by microwaving or baking until soft.
- Prepare the rest of the ingredients by mixing corn, black beans, cilantro, cornmeal, garlic powder, cumin, salt, and minced chipotle pepper in a bowl.
- Once the sweet potato is cool, scoop out the flesh and mix it with the other ingredients.
- Chill the mixture for 30 minutes to absorb moisture.
- Shape the mixture into patties and coat with remaining cornmeal.
- Cook the patties in a skillet with oil or bake in the oven until golden brown.
- Assemble the burgers with mayonnaise, patties, and avocado slices.
