Instructions
- Preheat the oven to 400°F (204°C) and prepare sweet potatoes by cutting them in half, rubbing with olive oil, and placing them face down on a foil-lined baking sheet.
- Bake the sweet potatoes until soft, about 30 minutes, then set aside and reduce the oven temperature to 375°F (190°C).
- While the potatoes are baking, cook the rice or quinoa as needed.
- In a mixing bowl, mash half of the black beans for texture, then add the sweet potato and lightly mash it.
- Mix in the cooked rice, green onion, nut meal, and spices, adjusting seasonings as necessary.
- Lightly grease a baking sheet and use a 1/4 cup measuring cup lined with plastic wrap to mold the mixture into patties.
- Transfer the patties to the baking sheet and gently press down.
- Bake the burgers for 30-45 minutes, flipping them halfway through for even cooking.
- Serve on slider buns, atop a salad, or freeze for later use.
