Sweet Potato Black Bean Burger

Ingredients

The burger mixture

  • 2 cups mashed sweet potato
  • 1 - 1½ cups cooked brown rice
  • 1 cup cooked salted black beans
  • ½ cup finely diced green onion
  • ½ cup walnut or pecan meal
  • tsp ground cumin
  • 1 tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp chipotle powder (optional)
  • 1 Tbsp brown sugar (optional)

For serving (optional)

  • as desired sliced avocado
  • as desired sprouts, lettuce or parsley
  • as desired sliced onion
  • as desired Whiskey BBQ Ketchup

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare sweet potatoes by cutting them in half, rubbing with olive oil, and placing them face down on a foil-lined baking sheet.
  2. Bake the sweet potatoes until soft, about 30 minutes, then set aside and reduce the oven temperature to 375°F (190°C).
  3. While the potatoes are baking, cook the rice or quinoa as needed.
  4. In a mixing bowl, mash half of the black beans for texture, then add the sweet potato and lightly mash it.
  5. Mix in the cooked rice, green onion, nut meal, and spices, adjusting seasonings as necessary.
  6. Lightly grease a baking sheet and use a 1/4 cup measuring cup lined with plastic wrap to mold the mixture into patties.
  7. Transfer the patties to the baking sheet and gently press down.
  8. Bake the burgers for 30-45 minutes, flipping them halfway through for even cooking.
  9. Serve on slider buns, atop a salad, or freeze for later use.
