Sweet Potato Quinoa Burger

The Sauce

Instructions
- Preheat the oven to 400°F and pierce the sweet potato several times with a fork. Bake for 50 to 60 minutes until tender, then cool and mash.
- If using a flax egg, mix 1 tablespoon of ground flax seed with 3 tablespoons of warm water and set aside.
- In a food processor, combine the mashed sweet potato, chickpeas, quinoa, flour, pepitas, cilantro, onion, garlic, egg, Dijon mustard, chile powder, cumin, smoked paprika, and salt. Pulse until chunky, being careful not to over-process.
- Form the mixture into 6 patties and refrigerate for at least 1 hour.
- Heat a grill pan or outdoor grill to medium-high and brush with oil. Cook the patties for 10 minutes on each side.
- For the sauce, blend all sauce ingredients in a food processor until smooth.
