Sweet Potato and Mushroom Veggie Burger

Ingredients

The burger mixture

  • ½ cup quinoa
  • 1 tablespoon olive oil or grapeseed oil
  • 1 small shallot or red onion, minced
  • pinch red pepper flakes
  • 5 to 6 ounces cremini mushrooms
  • 1 medium sweet potato, about 11 oz
  • ½ cup panko bread crumbs
  • ½ cup finely minced parsley or cilantro
  • ½ cup grated Parmigiano Reggiano
  • 3 eggs, beaten

For serving (optional)

  • buns
  • 1 to 2 avocados, mashed
  • quick-pickled onions

Instructions

  1. Cook quinoa with water and a pinch of salt until tender.
  2. Sauté shallots or onion with red pepper flakes until softened.
  3. Shred mushrooms and sweet potatoes using a food processor.
  4. Add shredded vegetables to the sauté pan and cook until soft.
  5. Combine cooked quinoa, panko, parsley, and Parmigiano in a bowl.
  6. Add eggs and mix well, adjusting seasoning as needed.
  7. Form patties and test fry one to adjust consistency if necessary.
  8. Pan-fry or broil the patties until golden brown.
  9. Serve on buns with mashed avocado and pickled onions if desired.
