Sweet Potato and Mushroom Veggie Burger

Instructions
- Cook quinoa with water and a pinch of salt until tender.
- Sauté shallots or onion with red pepper flakes until softened.
- Shred mushrooms and sweet potatoes using a food processor.
- Add shredded vegetables to the sauté pan and cook until soft.
- Combine cooked quinoa, panko, parsley, and Parmigiano in a bowl.
- Add eggs and mix well, adjusting seasoning as needed.
- Form patties and test fry one to adjust consistency if necessary.
- Pan-fry or broil the patties until golden brown.
- Serve on buns with mashed avocado and pickled onions if desired.
