Ingredients

The burger patties

  • pounds sweet potatoes
  • ½ cup quinoa
  • 1 cup water
  • 1 can (15 ounces) black beans
  • ½ cup chopped red onion
  • cup chopped fresh cilantro
  • 2 cloves garlic
  • 2 tablespoons adobo sauce or smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • cups quick-cooking oats
  • to taste none extra-virgin olive oil (for brushing)

Serving options

  • 8 whole whole wheat hamburger buns (optional)
  • to taste none favorite burger fixings (e.g., avocado, tomato, onion, lettuce, pickles, cheese, sprouts, ketchup, mustard)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes in half and roast them until tender, about 30 to 40 minutes.
  3. Cook the quinoa with water until all the water is absorbed, then let it steam.
  4. Once the sweet potatoes are cool, remove the skin and chop the insides.
  5. In a large bowl, combine the sweet potatoes, quinoa, black beans, onion, cilantro, garlic, adobo sauce, cumin, chili powder, and salt.
  6. Mix in the oats until the mixture holds together.
  7. Shape the mixture into 8 patties, about 3½ to 4 inches in diameter.
  8. Brush the patties with olive oil and place them on the baking sheet.
  9. Bake for about 35 minutes, flipping halfway through, until golden.
  10. Serve with your favorite toppings and enjoy!
