Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Slice the sweet potatoes in half and roast them until tender, about 30 to 40 minutes.
- Cook the quinoa with water until all the water is absorbed, then let it steam.
- Once the sweet potatoes are cool, remove the skin and chop the insides.
- In a large bowl, combine the sweet potatoes, quinoa, black beans, onion, cilantro, garlic, adobo sauce, cumin, chili powder, and salt.
- Mix in the oats until the mixture holds together.
- Shape the mixture into 8 patties, about 3½ to 4 inches in diameter.
- Brush the patties with olive oil and place them on the baking sheet.
- Bake for about 35 minutes, flipping halfway through, until golden.
- Serve with your favorite toppings and enjoy!
