Ingredients

The burger mixture

  • ½ cup mashed sweet potato
  • 1 and ½ cups black beans
  • 2 teaspoons extra virgin olive oil
  • 1 cup diced white onion
  • ½ medium red bell pepper
  • ½ teaspoon salt
  • 1 small jalapeño (optional)
  • 3 cloves garlic
  • 1 teaspoon ground cumin
  • ½ teaspoon chipotle chili powder
  • 1 teaspoon dry parsley
  • 1 large egg
  • 1 cup plain bread crumbs

For serving

  • 5 units burger buns
  • to taste lettuce
  • to taste barbecue sauce

Instructions

  1. Preheat the oven to 400°F and roast the sweet potato until tender.
  2. Remove the skin from the sweet potato and mash it, measuring out ½ cup.
  3. Sauté diced onion and bell pepper in olive oil until softened, then add jalapeño and garlic.
  4. Combine the mashed sweet potato and black beans, leaving some beans whole for texture.
  5. Mix in the sautéed vegetables, spices, whisked egg, and bread crumbs until well combined.
  6. Form the mixture into patties, keeping them about ½ inch thick.
  7. Cook the patties in a skillet over medium heat until golden on both sides.
  8. Serve on buns with your choice of toppings.
