Instructions
- Preheat the oven to 400°F and roast the sweet potato until tender.
- Remove the skin from the sweet potato and mash it, measuring out ½ cup.
- Sauté diced onion and bell pepper in olive oil until softened, then add jalapeño and garlic.
- Combine the mashed sweet potato and black beans, leaving some beans whole for texture.
- Mix in the sautéed vegetables, spices, whisked egg, and bread crumbs until well combined.
- Form the mixture into patties, keeping them about ½ inch thick.
- Cook the patties in a skillet over medium heat until golden on both sides.
- Serve on buns with your choice of toppings.
