Ingredients

The Burgers

  • cups cooked quinoa
  • 1 cup mashed sweet potatoes
  • ½ cup black beans
  • 1 tablespoon tomato paste
  • 1 large egg
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cinnamon
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoons brown sugar
  • 1 teaspoon Worcestershire sauce
  • ½ cup shredded sharp cheddar cheese
  • 4 pieces burger buns
  • 4 pieces fried eggs

Baked Cheddar Beer Onion Rings

  • 2 large sweet onions
  • ½ cup buttermilk
  • ½ cup beer
  • 1 teaspoon Dijon mustard
  • ½ cup whole wheat flour
  • cups cheddar cheese crackers
  • ½ cup Panko bread crumbs
  • 2 teaspoons smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Combine quinoa, mashed sweet potatoes, black beans, tomato paste, egg, and spices in a bowl.
  2. Mix well and form into 4 or 5 burger patties, refrigerate while preparing onion rings.
  3. Preheat oven to 450°F and prepare baking sheets.
  4. For onion rings, whisk flour, buttermilk, beer, and mustard in one bowl.
  5. In another bowl, mix crushed cheddar crackers, Panko, and spices.
  6. Dip onion slices in the wet mixture, then coat with the dry mixture, and place on baking sheet.
  7. Lightly spray onion rings with oil and bake for 20-25 minutes, flipping halfway.
  8. Cook burgers in a skillet over medium heat, flipping gently after 5-6 minutes.
  9. Top burgers with cheese during the last minute of cooking.
  10. Assemble burgers with onion rings and fried eggs on buns or lettuce.
