Baked Cheddar Beer Onion Rings

Instructions
- Combine quinoa, mashed sweet potatoes, black beans, tomato paste, egg, and spices in a bowl.
- Mix well and form into 4 or 5 burger patties, refrigerate while preparing onion rings.
- Preheat oven to 450°F and prepare baking sheets.
- For onion rings, whisk flour, buttermilk, beer, and mustard in one bowl.
- In another bowl, mix crushed cheddar crackers, Panko, and spices.
- Dip onion slices in the wet mixture, then coat with the dry mixture, and place on baking sheet.
- Lightly spray onion rings with oil and bake for 20-25 minutes, flipping halfway.
- Cook burgers in a skillet over medium heat, flipping gently after 5-6 minutes.
- Top burgers with cheese during the last minute of cooking.
- Assemble burgers with onion rings and fried eggs on buns or lettuce.
