Sweet Potato Black Bean Burgers

Ingredients

  • 2 cans black beans
  • 1 tablespoon extra-virgin olive oil
  • ½ cup mashed sweet potato
  • ½ yellow onion chopped
  • 3 cloves garlic
  • ¼ cup oat flour
  • ¼ cup BBQ sauce
  • ½ teaspoon ground cumin
  • ½ teaspoon fine sea salt

Instructions

  1. Preheat the oven to 350ºF and spread the black beans on a baking sheet to dry for about 15 minutes.
  2. Heat olive oil in a skillet and sauté the chopped onion until softened, then add minced garlic and cook for another minute.
  3. In a bowl, combine the sautéed onion and garlic with the dried black beans, mashed sweet potato, oat flour, BBQ sauce, cumin, and salt.
  4. Use a fork to mix and mash the beans slightly to form a sticky batter.
  5. Scoop the mixture onto a baking sheet lined with parchment paper, shaping it into burger patties about ¾-inch thick.
  6. Bake the burgers for 20 minutes, then flip and bake for an additional 5 to 10 minutes until slightly dry around the edges.
  7. Serve warm on hamburger buns with your favorite toppings.
