Quinoa Sweet Potato Burgers

Instructions
- Preheat oven to 375ºF and prepare a baking sheet with coconut oil spray.
- Cut sweet potatoes in half, drizzle with olive oil, poke with a fork, and bake skin-side down for 50-60 minutes.
- While sweet potatoes are baking, mix the remaining ingredients in a large bowl.
- Once sweet potatoes are done, let them cool for about 10 minutes, then scoop out the flesh and mash it.
- Add the mashed sweet potato to the mixture and combine thoroughly.
- Form the mixture into 1-inch thick patties using a ½ cup scoop and place on the baking sheet.
- Bake patties for 15 minutes on each side for a total of 30 minutes.
- Heat olive oil in a skillet over low/medium heat and pan fry the patties for 4-5 minutes on each side until golden brown.
- Add desired toppings and serve.
