Quinoa Sweet Potato Burgers

Ingredients

  • 2 cups roasted sweet potato, mashed
  • 15 oz canned black beans, drained and rinsed
  • ½ cup minced purple onion
  • 2 cups cooked quinoa
  • 2 tablespoons finely diced jalapeño
  • cup roasted/unsalted sunflower seeds
  • ¼ cup oat flour
  • 2 tablespoons oat flour
  • 1 large egg
  • 1 tablespoon ground cumin
  • 2 teaspoons garlic powder
  • ¼ teaspoon sea salt
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375ºF and prepare a baking sheet with coconut oil spray.
  2. Cut sweet potatoes in half, drizzle with olive oil, poke with a fork, and bake skin-side down for 50-60 minutes.
  3. While sweet potatoes are baking, mix the remaining ingredients in a large bowl.
  4. Once sweet potatoes are done, let them cool for about 10 minutes, then scoop out the flesh and mash it.
  5. Add the mashed sweet potato to the mixture and combine thoroughly.
  6. Form the mixture into 1-inch thick patties using a ½ cup scoop and place on the baking sheet.
  7. Bake patties for 15 minutes on each side for a total of 30 minutes.
  8. Heat olive oil in a skillet over low/medium heat and pan fry the patties for 4-5 minutes on each side until golden brown.
  9. Add desired toppings and serve.
