Quinoa Black Bean Burgers

Instructions
- Preheat the oven to 425°F.
- Combine water and dry quinoa in a saucepan, bring to a boil, then simmer covered for 15 minutes until cooked.
- Chop the broccoli, mushrooms, red bell pepper, and onion into 1-inch pieces and process in a food processor until small.
- Spread the pureed veggies on a lined baking sheet, season with salt and pepper, and roast for 15 minutes until browned.
- Add black beans to the food processor and puree until mostly broken down.
- In a large bowl, combine pureed black beans, cooked quinoa, spices, roasted vegetable puree, and egg, then stir to combine.
- Form the mixture into 8 patties about 3-4 inches wide and ½ inch thick.
- Heat olive oil in a skillet over medium heat and pan-fry the patties for 8-10 minutes, flipping when golden brown.
