Quinoa Black Bean Burgers

Ingredients

  • ¼ cup dry quinoa
  • ½ cup water
  • 1 cup broccoli florets
  • 8 ounces white or Cremini mushrooms
  • 1 each red bell pepper
  • 1 small onion
  • 4 cloves garlic
  • ¼ teaspoon salt
  • to taste fresh ground black pepper
  • 1 tablespoon egg
  • 3 tablespoons water
  • 2 cans (15 ounce) black beans
  • 2 teaspoons ground cumin
  • teaspoons chili powder
  • 1 tablespoon nutritional yeast (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 425°F.
  2. Combine water and dry quinoa in a saucepan, bring to a boil, then simmer covered for 15 minutes until cooked.
  3. Chop the broccoli, mushrooms, red bell pepper, and onion into 1-inch pieces and process in a food processor until small.
  4. Spread the pureed veggies on a lined baking sheet, season with salt and pepper, and roast for 15 minutes until browned.
  5. Add black beans to the food processor and puree until mostly broken down.
  6. In a large bowl, combine pureed black beans, cooked quinoa, spices, roasted vegetable puree, and egg, then stir to combine.
  7. Form the mixture into 8 patties about 3-4 inches wide and ½ inch thick.
  8. Heat olive oil in a skillet over medium heat and pan-fry the patties for 8-10 minutes, flipping when golden brown.
