Quinoa Beet Veggie Burgers

raw walnuts (crushed or ground into a loose meal)
Instructions
- Prepare quinoa if not already cooked.
- Heat a skillet and sauté diced onion with salt and pepper until soft.
- Add chopped mushrooms to the skillet and cook until browned.
- Remove from heat and mash in black beans to a rough consistency.
- Combine the bean mixture with quinoa, grated beet, spices, and adjust seasoning.
- Incorporate walnut meal until the mixture can form patties.
- Chill the mixture in the fridge while preheating the oven to 375°F (190°C).
- Form the mixture into patties and place on a baking sheet.
- Brush or spray the patties with olive oil and bake for 30-45 minutes, flipping halfway.
