Quinoa Beet Veggie Burgers

Ingredients

  • ¾ cup cooked quinoa
  • ½ large red onion (finely diced)
  • 1 cup finely chopped mushrooms
  • 1 pinch salt
  • 1 pinch pepper
  • 1 15-ounce can black beans (well rinsed and drained)
  • 1 cup finely grated raw beet
  • 1 tsp cumin
  • ½ tsp chili powder
  • ¼ tsp smoked paprika
  • ½ cup raw walnuts (crushed or ground into a loose meal)

Instructions

  1. Prepare quinoa if not already cooked.
  2. Heat a skillet and sauté diced onion with salt and pepper until soft.
  3. Add chopped mushrooms to the skillet and cook until browned.
  4. Remove from heat and mash in black beans to a rough consistency.
  5. Combine the bean mixture with quinoa, grated beet, spices, and adjust seasoning.
  6. Incorporate walnut meal until the mixture can form patties.
  7. Chill the mixture in the fridge while preheating the oven to 375°F (190°C).
  8. Form the mixture into patties and place on a baking sheet.
  9. Brush or spray the patties with olive oil and bake for 30-45 minutes, flipping halfway.
