Instructions
- Rinse the uncooked quinoa thoroughly in a mesh strainer.
- In a pan, heat 2 teaspoons of olive oil, then add the quinoa and toast for about 2 minutes.
- Add the vegetable broth and salt to the pan, bring to a boil, then cover and reduce to medium-low heat for 15 minutes.
- Once cooked, fluff the quinoa with a fork and let it cool.
- In a bowl, combine the cooked quinoa, vegan mozzarella, sun-dried tomatoes, flax egg mixture, flour, scallions, salt, pepper, garlic powder, oil, and sriracha, mixing until well combined.
- Divide the mixture into 4 equal burger patties.
- Heat oil in a large pan over medium-high heat and test if it's hot enough.
- Cook the patties for 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes until golden brown.
- Place the cooked patties on paper towels to absorb excess oil and serve with your favorite toppings.
