Ingredients

Chipotle Black Bean Quinoa Burgers

  • 1 ½ cups cooked black beans
  • ½ cup uncooked quinoa
  • ¼ cup panko
  • 2 cloves garlic
  • ½ to 1 tbsp minced chipotle in adobo sauce
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • to taste salt
  • 1 large egg

Sweet Corn Relish

  • 2 ears corn
  • ¼ cup chopped yellow onion
  • 1 medium jalapeño pepper
  • 2 tbsp apple cider vinegar
  • 1 tbsp white sugar
  • a pinch salt

Toppings

  • to taste cheese
  • to taste lettuce
  • to taste cilantro
  • to taste onions
  • to taste tomatoes

Instructions

  1. Preheat the oven to 400ºF.
  2. Mash half of the black beans in a large bowl and stir in the remaining black beans, quinoa, panko, garlic, minced chipotle, onion powder, and cumin.
  3. Add salt to taste and fold in the beaten egg.
  4. Line a baking sheet with parchment paper and divide the mixture into 6 mounds, shaping each into a patty.
  5. Bake the burgers for about 20 minutes, flipping halfway through until they are baked through and slightly crispy.
  6. For the Sweet Corn Relish, combine all ingredients in a small saucepan, bring to a boil, cover, and simmer for 10 minutes.
  7. Refrigerate the relish before serving.
