Instructions
- Preheat the oven to 400ºF.
- Mash half of the black beans in a large bowl and stir in the remaining black beans, quinoa, panko, garlic, minced chipotle, onion powder, and cumin.
- Add salt to taste and fold in the beaten egg.
- Line a baking sheet with parchment paper and divide the mixture into 6 mounds, shaping each into a patty.
- Bake the burgers for about 20 minutes, flipping halfway through until they are baked through and slightly crispy.
- For the Sweet Corn Relish, combine all ingredients in a small saucepan, bring to a boil, cover, and simmer for 10 minutes.
- Refrigerate the relish before serving.
