Chipotle Black Bean Burger

Ingredients

  • 2 cups cooked quinoa, cooled
  • 1 15-ounce can vegetarian refried black beans
  • ½ bell pepper chopped finely
  • ¼ red onion diced finely
  • 1 medium carrot, shredded
  • 2 tablespoons fresh cilantro, chopped
  • ¼ cup vegan mayonnaise
  • ½ cup whole grain breadcrumbs
  • 1 teaspoon chipotle seasoning
  • to taste salt (optional)

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. In a mixing bowl, combine quinoa, refried black beans, bell pepper, onion, carrot, cilantro, mayonnaise, breadcrumbs, and chipotle seasoning until smooth. Season with salt to taste.
  3. 3. Spray a baking sheet with non-stick cooking spray.
  4. 4. Scoop ½-cup portions of the mixture and form into 10 patties, about 3 inches in diameter and 1 inch thick. Place on the baking sheet.
  5. 5. Bake in the oven for about 40-45 minutes until crispy and firm.
  6. 6. Remove from the oven and serve as desired.
