Instructions
- Heat a large skillet on medium and add chorizo, browning the meat until done. Drain fat and set aside.
- Return the pan to heat and add olive oil.
- Add diced onion and cook until mostly translucent.
- Stir in minced garlic and spices, cooking for a minute.
- Incorporate tomato sauce, sugar, roasted red pepper, water, and diced tomatoes.
- Add the cooked sausage back into the pan and simmer on medium-low for 10 minutes, stirring occasionally.
- Serve immediately.
