Instructions
- Combine the fresh pork sausage and vinegar in a large bowl and mix well.
- In a separate bowl, blend all the dry seasonings for the chorizo.
- Sprinkle the seasoning mixture over the pork sausage and mix until evenly incorporated.
- Divide the mixture into four ½ pound servings or eight ¼ pound servings.
- Shape into patties and freeze any portions not used immediately.
- Store in the refrigerator for up to 5 days before cooking.
