Ingredients

Italian Sausage Ingredients

  • 2 teaspoons crushed fennel seeds
  • 5 tablespoons fresh oregano
  • 5 tablespoons fresh sage
  • 1 tablespoon salt
  • teaspoons cayenne pepper
  • 1 tablespoon paprika
  • 1 tablespoon black pepper
  • 2 tablespoons chopped garlic
  • 4 tablespoons red wine

Chorizo Sausage Ingredients

  • 1 cup cold white wine
  • 8 teaspoons paprika
  • 4 teaspoons salt
  • 5 teaspoons fresh garlic
  • 4 teaspoons cayenne pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon black pepper

Instructions

  1. Combine all spices into the ground meat of your choice.
  2. Mix the meat and spices thoroughly by hand.
  3. Fry a few sausage patties for taste testing and adjust spices if needed.
  4. Attach casings to the sausage machine nozzle.
  5. Crank the machine to fill the casings with the sausage mixture.
