The Sauce

Instructions
- Combine all ingredients for the Italian sausage in a large mixing bowl and knead until evenly mixed.
- Heat a large sauté pan or stock pot over medium-high heat and add fat.
- Add sausage meat in chunks to the pan and cook until browned and crispy.
- Lower the heat to medium and add onion, garlic, celery, and bell pepper, cooking until softened.
- Stir in crushed tomatoes, water, olives, parsley, oregano, salt, and pepper, then bring to a simmer.
- Lower the heat and let the sauce simmer for about an hour until thickened.
