Ingredients

  • 4 cloves fresh garlic, chopped
  • 120 ounces crushed tomatoes (four 28-32 ounce cans, San Marzano if possible)
  • 2 pounds sweet Italian sausage
  • 2 bunches fresh basil, finely chopped
  • 1 medium onion, diced
  • ½ cup olive oil
  • 1 tablespoon sea salt or more to taste
  • ½ teaspoon black pepper or more to taste
  • 1 tablespoon sugar (optional)

Instructions

  1. 1. Heat a large skillet or stock pot over medium-high heat and add olive oil and sausage, browning the sausage on both sides.
  2. 2. Add diced onion and chopped garlic to the pot, cooking until the onions are translucent.
  3. 3. Incorporate crushed tomatoes into the pot, rinsing the cans with a little water to add to the sauce.
  4. 4. Add chopped basil, sea salt, black pepper, and sugar (if using) to the sauce.
  5. 5. Bring the sauce to a boil, then reduce heat to simmer and cook for at least 2 hours, ideally 4-6 hours for richer flavor.
