Ingredients

The sauce

  • 2 pounds tomatoes (fresh, or 2 cups canned plum tomatoes with juice)
  • cup carrot (chopped)
  • cup celery (chopped)
  • cup onion (chopped)
  • 3 tablespoons olive oil (extra-virgin)
  • to taste salt

The pasta

  • 1 pound whole-wheat pasta (cooked)

Optional add-ins

  • ground beef
  • ground turkey
  • sausage
  • mushrooms (diced)
  • herbs (dried)

To serve

  • parmesan cheese

Instructions

  1. Boil fresh tomatoes for 1 minute, then drain and peel them once cool.
  2. Chop the tomatoes (fresh or canned) and reserve the juice.
  3. Combine tomatoes, juice, chopped carrot, celery, and onion in a large saucepan over low heat and simmer for 30 minutes, stirring occasionally.
  4. Add olive oil and increase the heat to a stronger simmer for an additional 15 minutes, stirring frequently and mashing tomatoes.
  5. Taste and adjust salt as needed.
  6. Mix in any optional add-ins like ground meat or herbs if desired.
  7. Serve the sauce over cooked whole-wheat pasta and top with parmesan cheese.
