Homemade Spaghetti Sauce

Instructions
- Boil fresh tomatoes for 1 minute, then drain and peel them once cool.
- Chop the tomatoes (fresh or canned) and reserve the juice.
- Combine tomatoes, juice, chopped carrot, celery, and onion in a large saucepan over low heat and simmer for 30 minutes, stirring occasionally.
- Add olive oil and increase the heat to a stronger simmer for an additional 15 minutes, stirring frequently and mashing tomatoes.
- Taste and adjust salt as needed.
- Mix in any optional add-ins like ground meat or herbs if desired.
- Serve the sauce over cooked whole-wheat pasta and top with parmesan cheese.
