Ingredients

The base

  • 1 cup walnuts, soaked overnight
  • 1 ½ cups cooked chickpeas
  • ¾ cup sun dried tomatoes

The spices and seasoning

  • 4-5 teaspoons cumin
  • 4-5 teaspoons smoked paprika
  • 2-3 teaspoons onion powder
  • 2-3 teaspoons apple cider vinegar
  • 1 ¼ teaspoons oregano
  • 1 teaspoon garlic powder
  • ¾ teaspoon ground black pepper
  • ½ - 1 teaspoon sea salt
  • ½ teaspoon chipotle seasoning

Instructions

  1. Pulse all ingredients in a food processor until crumbly.
  2. If desired, sauté in a pan with a drizzle of oil to warm and crisp the edges.
  3. Serve in tacos, burritos, or as desired.
