Instructions
- Preheat the oven to 375°F.
- Make the walnut chorizo by blending walnuts with spices, salt, and tomato paste until coarse.
- Line a baking tray with parchment paper and cover with tortilla chips.
- Drizzle chips with hot sauce and add spoonfuls of refried beans.
- Sprinkle with vegan cheese and walnut chorizo, then bake for 10-12 minutes until cheese is melted.
- Prepare fresh toppings while nachos are baking.
- Once baked, top nachos with fresh ingredients and serve immediately.
