Ingredients

Walnut Chorizo

  • 1 cup walnuts
  • ½ teaspoon kosher salt
  • 1 teaspoon granulated garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground chipotle (or cayenne)
  • 1 teaspoon dried oregano (or thyme)
  • 1 tablespoon tomato paste
  • 1 tablespoon water

Nachos

  • enough to line a 13 x 18 inch sheet pan tortilla chips
  • 1 cup refried beans (optional) or black beans
  • cups vegan cheese (4-6 ounces)
  • 1 batch vegan chorizo

Fresh Toppings

  • 1 cup cherry tomatoes, sliced
  • 1 whole avocado, sliced
  • 3 radishes, sliced
  • ¼ cup cilantro leaves
  • to taste pickled onions or pickled jalapeño
  • to taste hot sauce
  • to taste vegan sour cream

Instructions

  1. Preheat the oven to 375°F.
  2. Make the walnut chorizo by blending walnuts with spices, salt, and tomato paste until coarse.
  3. Line a baking tray with parchment paper and cover with tortilla chips.
  4. Drizzle chips with hot sauce and add spoonfuls of refried beans.
  5. Sprinkle with vegan cheese and walnut chorizo, then bake for 10-12 minutes until cheese is melted.
  6. Prepare fresh toppings while nachos are baking.
  7. Once baked, top nachos with fresh ingredients and serve immediately.
