The nachos

  • 1 can black beans
  • 1 cup sweet potato vegan nacho cheese
  • 1 ripe avocado

  • to taste cilantro
  • to taste chopped red onions
  • to taste pickled serranos chiles
  • to taste favorite salsa

Toppings (Variation #2)

  • to taste chickpeas
  • to taste roasted broccoli
  • to taste guacamole
  • to taste cilantro
  • to taste hemp seeds
  • to taste pickled serrano chiles

Instructions

  1. Preheat the oven to 350°F.
  2. Arrange the tortilla chips on an oven-proof baking sheet or platter.
  3. Top the chips with black beans and dollops of sweet potato nacho cheese.
  4. Bake for about 10 minutes until heated through.
  5. Meanwhile, smash the avocado with a pinch of salt.
  6. Remove the nachos from the oven and top with smashed avocado and any other desired toppings.
