Ingredients

The base

  • 8 ounces tortilla chips
  • 1 ½ cups homemade vegan nacho cheese

The toppings

  • 1 cup black beans
  • 1 cup chopped red onion
  • ½ cup pickled jalapeño slices
  • 2 cups shredded lettuce
  • 1 cup guacamole
  • 1 cup salsa
  • 1 cup chopped fresh tomatoes
  • ½ cup sour cream
  • ¼ cup sliced fresh jalapeños

Instructions

  1. Heat the nacho cheese and beans in the microwave or on the stove.
  2. Divide the chips between 4 plates.
  3. Layer the cheese and beans first, then add all of the other toppings.
  4. For baked nachos, preheat the oven to 350°F (175°C).
  5. Spread the chips on a parchment-lined cookie sheet.
  6. Drizzle cheese over the chips, followed by beans, red onion, and pickled jalapeños.
  7. Bake for about 5 minutes until the cheese is heated or melted.
  8. Remove from the oven and add the remaining toppings.
