Ingredients

The nachos

  • 1 bag corn chips
  • 10 ounces vegan crumbles
  • 1 15-ounce can black beans
  • ½ cup water
  • 2 tablespoons taco seasoning
  • 1 cup vegan cheese sauce

Optional toppings

  • to taste tomatoes
  • to taste pico de gallo
  • to taste salsa
  • to taste vegan sour cream
  • to taste jalapeños
  • to taste olives
  • to taste guacamole
  • to taste avocado
  • to taste cilantro
  • to taste green onion

Instructions

  1. Preheat the oven to 350℉ and line a baking sheet with parchment or aluminum foil.
  2. In a skillet, combine cooked vegan crumbles, water, and taco seasoning over medium-low heat, stirring until the water evaporates.
  3. Add the black beans to the skillet and stir, cooking for an additional 5 minutes.
  4. On the prepared baking sheet, layer corn chips, followed by the vegan crumble and bean mixture, then drizzle vegan cheese sauce on top. Repeat for a second layer.
  5. Bake in the oven for 5-6 minutes to warm the chips.
  6. Remove from the oven and add your favorite toppings before serving.
