Ingredients

Spicy Walnut Meat

  • cup walnuts
  • 1 tsp sea salt
  • tbsp tomato paste
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp oregano
  • 2 tsp basil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp olive oil
  • ½ tsp red chili flakes
  • ½ tsp cayenne pepper
  • up to 2 tbsp water

Nachos

  • 1 package tortilla chips
  • 1 can refried beans
  • to taste vegan or regular cheese
  • all of it walnut meat

Garnish

  • to taste tomatoes
  • to taste avocado
  • to taste cilantro
  • to taste pickled onion
  • to taste sour cream
  • to taste lime
  • to taste jalapeño
  • to taste hot sauce

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a food processor, combine all the ingredients for the spicy walnut meat and blend until crumb-like.
  3. Transfer the walnut mixture to a bowl.
  4. Layer tortilla chips on a baking sheet, followed by refried beans, cheese, and walnut meat. Repeat the layers.
  5. Bake for about 15 minutes until the cheese is melted.
  6. Garnish with tomatoes, avocado, cilantro, pickled onion, sour cream, lime, jalapeño, and hot sauce before serving.
