Ingredients

Walnut Meat

  • 2 cups raw walnuts
  • 1 ½ tbsp oil
  • 4 tbsp water
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp soy sauce
  • ½ tsp chipotle powder or chili powder
  • ½ tsp paprika
  • ½ tsp cumin
  • ¼ tsp sea salt
  • ¼ tsp ground black pepper
  • 1 tsp brown sugar or coconut sugar or cane sugar

Taco Assembly

  • 1 cup salsa or pico de gallo
  • 1 cup guacamole
  • to taste pickled onions
  • ½ cup lime crema or vegan sour cream or spicy mayo
  • to taste parsley or cilantro

Instructions

  1. Soak the walnuts in boiling water for 30 minutes, then drain.
  2. In a food processor, blend the walnuts with oil, water, and seasonings until minced.
  3. Cook the walnut mixture in a pan over medium heat for about 5 minutes.
  4. Heat oil in a skillet and cook the tortillas until golden brown.
  5. Assemble the tacos with walnut meat, pickled onions, salsa, guacamole, and herbs.
