Vegan Taco Meat with Lentils and Walnuts

Instructions
- Pulse dry uncooked lentils in a food processor until partially chopped and set aside.
- Pulse walnuts until chopped into small pieces and set aside.
- In a large pan, sauté chopped onion in oil or broth until translucent, about 5 minutes.
- Add walnuts and sauté for 3 more minutes until caramelized.
- Add chopped lentils to the pan and sauté for 1 minute.
- Add veggie broth and spices, mix well, and cook covered for 10-15 minutes until lentils are soft.
- Uncover and sauté until all broth is evaporated and mixture begins to brown, about 3 minutes.
- Serve as desired.
