Instructions
- Cook brown lentils in vegetable broth with bay leaves and salt until tender, about 15-20 minutes, then drain excess liquid.
- Remove bay leaves and stir in tomato sauce and spices, simmer for 5 minutes.
- Heat corn tortillas in a skillet until golden.
- Assemble tacos by adding lettuce, lentil filling, guacamole, salsa, and cilantro to each tortilla.
