Instructions
- Toast the corn tortillas in a skillet over medium heat until lightly browned.
- Sort and rinse the lentils, then bring 3 cups of water to a boil and add the lentils.
- Reduce the heat and simmer the lentils for 20 minutes until tender.
- While the lentils cook, prepare the pico de gallo and mix the taco seasoning.
- Dice the onion and mince the garlic, then cook them in olive oil until tender.
- Add the drained lentils, taco seasoning, and a half cup of water to the skillet with the onion and garlic.
- Cook until the mixture thickens, about 3-5 minutes, and season with salt.
- Build the tacos using lentils, avocado, pico de gallo, and sour cream.
