Ingredients

The lentil filling

  • 2 cups dry brown lentils
  • 1 small yellow onion
  • 2 cloves garlic
  • 2 Tbsp olive oil
  • 1 recipe taco seasoning
  • 1 tsp salt

The tacos

  • 16 small corn tortillas
  • 1 recipe pico de gallo
  • 8 oz sour cream
  • 2 small avocados

Instructions

  1. Toast the corn tortillas in a skillet over medium heat until lightly browned.
  2. Sort and rinse the lentils, then bring 3 cups of water to a boil and add the lentils.
  3. Reduce the heat and simmer the lentils for 20 minutes until tender.
  4. While the lentils cook, prepare the pico de gallo and mix the taco seasoning.
  5. Dice the onion and mince the garlic, then cook them in olive oil until tender.
  6. Add the drained lentils, taco seasoning, and a half cup of water to the skillet with the onion and garlic.
  7. Cook until the mixture thickens, about 3-5 minutes, and season with salt.
  8. Build the tacos using lentils, avocado, pico de gallo, and sour cream.
