Ingredients

The filling

  • cups green lentils
  • 3 cups vegetable broth
  • 1 can (10 oz) mild diced tomatoes with green chiles
  • 1 Tbsp olive oil
  • ½ cup finely chopped yellow onion
  • 2 tsp minced garlic
  • 2 tsp ground cumin
  • tsp chili powder
  • tsp ancho chili powder
  • 1 tsp paprika
  • to taste salt and freshly ground black pepper
  • 3 Tbsp chopped fresh cilantro
  • 1 Tbsp fresh lime juice

For serving

  • as needed corn tortillas or crisp taco shells
  • as desired lettuce
  • as desired cheese
  • as desired tomatoes

Instructions

  1. Combine lentils, broth, olive oil, tomatoes, onions, garlic, chili powders, and paprika in a slow cooker.
  2. Season with salt and pepper to taste.
  3. Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours.
  4. Stir in cilantro and lime juice before serving.
  5. Serve warm in tortillas with desired toppings.
