Ingredients

The tacos

  • 2 pieces ripe avocados
  • 1 large handful fresh baby arugula
  • 1 cup roughly-chopped fresh cilantro leaves
  • ¼ small red onion
  • 1 tablespoon fresh lime juice
  • 1 piece serrano pepper (optional)
  • corn or flour tortillas
  • optional crumbled cotija cheese or queso fresco

The zesty lentils

  • 1 cup uncooked black (beluga) or green (French) lentils
  • cups vegetable or chicken stock
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • pinch salt and black pepper

Instructions

  1. Prepare the lentils by rinsing them and cooking them with stock and spices until tender.
  2. In a bowl, combine diced avocados, arugula, cilantro, red onion, lime juice, and serrano pepper.
  3. Assemble the tacos by filling tortillas with lentils, topping with the avocado mixture, and adding cheese if desired.
  4. Serve immediately.
