Instructions
- Pulse walnuts and sea salt in a food processor until crumbly.
- Add sun-dried tomatoes, spices, and lentils to the processor and pulse until well incorporated.
- Check seasoning and adjust with more salt, cumin, or chili as needed.
- If necessary, add a few tablespoons of water to bind the mixture.
- Divide the filling into romaine leaves and top with salsa and avocado slices.
- Serve chilled or at room temperature.
