Ingredients

The filling

  • 1 ½ cups raw walnuts
  • ½ teaspoon sea salt
  • 10 pieces sun-dried tomatoes
  • ½ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground coriander
  • 1 cup cooked brown or green lentils

The serving ingredients

  • 8 large romaine leaves
  • 1 cup salsa of choice
  • 1 piece avocado

Instructions

  1. Pulse walnuts and sea salt in a food processor until crumbly.
  2. Add sun-dried tomatoes, spices, and lentils to the processor and pulse until well incorporated.
  3. Check seasoning and adjust with more salt, cumin, or chili as needed.
  4. If necessary, add a few tablespoons of water to bind the mixture.
  5. Divide the filling into romaine leaves and top with salsa and avocado slices.
  6. Serve chilled or at room temperature.
