Ingredients

Lentil-Walnut Taco Meat

  • 1 cup uncooked French green lentils
  • 1 cup walnut pieces, toasted
  • teaspoons dried oregano
  • teaspoons ground cumin
  • teaspoons chili powder
  • ½ teaspoon fine grain sea salt
  • tablespoons extra-virgin olive oil
  • 2 tablespoons water

Toppings and Wraps

  • 1 to 2 large bell peppers, thinly sliced
  • ½ to 1 large onion, thinly sliced
  • to taste Cashew Sour Cream
  • to taste diced tomatoes or salsa
  • to taste green onion
  • to taste fresh lime juice
  • as needed lettuce wraps (large romaine, iceberg, or butter lettuce leaves)
  • as desired sliced avocado
  • as desired hot sauce
  • as desired cilantro

Instructions

  1. Cook lentils by rinsing and boiling them until tender, then drain excess water.
  2. Toast walnuts in the oven until golden and fragrant.
  3. Sauté onion and bell peppers in oil until translucent.
  4. In a food processor, combine cooked lentils and toasted walnuts, pulse until chopped, then mix in spices, oil, and water.
  5. Prepare toppings and wash lettuce leaves.
  6. Assemble tacos with lettuce, taco meat, sautéed vegetables, and other desired toppings.
