Ingredients

The taco meat

  • cup sun-dried tomatoes
  • 3 cups raw walnuts
  • 4 cloves garlic (minced)
  • ½ tsp sea salt
  • 1 Tbsp smoked paprika
  • 1 Tbsp ground cumin
  • 1 Tbsp chili powder
  • 2 tsp coconut sugar
  • 1-2 small habanero peppers (deseeded and chopped)
  • 1-2 tsp nutritional yeast (optional)
  • ¼ cup water (as needed)

For garnish/serving (optional)

  • as needed tortillas
  • as needed cilantro
  • as needed avocado
  • as needed radish

Instructions

  1. Soak sun-dried tomatoes in warm water for at least 5 minutes.
  2. Pulse walnuts in a food processor until they form a semi-fine meal.
  3. Drain sun-dried tomatoes and add them to the food processor with garlic, sea salt, smoked paprika, cumin, chili powder, coconut sugar, habaneros, and nutritional yeast.
  4. Blend until a smooth paste forms, adding reserved water as needed to achieve a thick but pourable consistency.
  5. Combine the mixture with the walnuts and stir to combine, adjusting flavors as necessary.
  6. Serve in tacos, salads, nachos, or burritos.
