Ingredients

The base

  • 3 cups Frozen Riced Cauliflower
  • ½ cup Walnuts
  • ½ cup Pecans

The spices

  • 1 tbsp Chili Powder
  • ½ tsp Garlic Powder
  • 1 tsp Cumin
  • 1 tsp Salt

Instructions

  1. 1. Steam or boil the cauliflower rice until tender and drain well.
  2. 2. Pulse the walnuts and pecans in a food processor until they resemble coarse meal.
  3. 3. Preheat the oven to 400°F and lay the cauliflower, nuts, and spices on a baking sheet, tossing everything together.
  4. 4. Bake for 10 minutes, toss, and bake for an additional 10 minutes or until crispy but not burnt.
  5. 5. Use the mixture as a base for tacos, chili, or as a meat replacement on nachos.
