Instructions
- 1. Boil Yukon Gold and sweet potatoes in a saucepan covered with cold water and a few pinches of salt until fork-tender, about 8 to 12 minutes.
- 2. Drain the potatoes and transfer them to a high-speed blender.
- 3. Add garlic, cashews, apple cider vinegar, nutritional yeast, onion powder, salt, olive oil, and water to the blender.
- 4. Blend until smooth, adding more liquid if needed.
- 5. For spicy cheese, blend in chipotle pepper or pickled jalapeños; for smoky flavor, add smoked paprika.
- 6. Serve with tortilla chips or over pasta.
