Instructions
- Cook the raw potato, onion, carrots, red pepper, garlic, and cashews in an Instant Pot with water for 5 minutes or on the stovetop for 20-25 minutes.
- Transfer cooked ingredients to a blender.
- Add the remaining ingredients, including reserved liquid, and blend until creamy and smooth.
- Serve immediately or warm on the stove if desired.
